MOOC #OWU: Open Wine University (Université de la Vigne et du Vin pour Tous) (EMMA)

Le MOOC #OWU créé par les enseignants-chercheurs de l’université de Bourgogne (membres de l’Institut Universitaire de la Vigne et du Vin) propose une plongée dans l’univers de la vigne et du vin. De la viticulture à la dégustation en passant par les terroirs, vous apprendrez toutes les étapes de fabrication de différents vins français, jusqu’aux étapes essentielles de la dégustation du vin. Pourquoi un vin est-il blanc, rouge, mousseux ou rosé ? Comment entraîner vos sens à la dégustation des arômes du vin ? Au-delà des techniques viticoles, ce MOOC vous transmettra aussi des connaissances quant à l’Histoire des cépages et des terroirs vitivinicoles de l’environnement socio-culturel de la vigne et du vin.

Learning Objectives:
Dans ce cours, plusieurs thématiques générales autour de la vigne et le vin seront abordées pendant 5 semaines.

Du raisin au vin:
Cette thématique vise à donner des clés de compréhension des étapes lors de l’élaboration du vin à travers l'étude de la matière première, des micro-organismes, de l'extraction de la couleur, de l'élevage du vin et le métier de viticulteur.

Le terroir viticole:
Cette thématique a pour objectif de de décliner les bases permettant d'appréhender la notion de "Terroir" en viticulture à travers l'étude des sols, des climats, des cépages. L'histoire de la constitution de quelques terroirs vous permettront de mieux comprendre cette notion.

Les sens de la dégustation:
Ici, nous vous expliquerons les rudiments de la dégustation technique et ses variantes. Les informations obtenues par les différents sens mis en jeu permettent d’inférer certaines caractéristiques du vin comme son vieillissement, le cépage, l’itinéraire de vinification. Une approche historique et sociale vous apprendra que les goûts varient dans le temps.

Transversalité et synthèse:
En dernière semaine, vous découvrirez comment l'on décrit un vin à travers les trois thématiques du cours.
